Uncured Canuckin’ Bacon is one of the leanest of our Whole Hog bacons. And, that’s because it’s made from one of the leanest parts of the hog: the loin. Not only does it have less fat, but it’s meatier, as well. Typically, pork belly is used for bacon, but when pork loin is used, it’s called Canadian style bacon. Canadian style bacon is nothing new; the pioneers made it often because nothing on a hog ever went to waste.
